By skyforbes Not sure when they did it, but I've had my Surface Pro for a few months now and remember that it wasn't able to uninstall when I first got it. I just went to uninstall some stuff from school and found out you can uninstall both Microsoft 365 Copilot and the main Copilot applications now if you don't want it on your hardware.
Did this and then remapped the keyboard button to just open up the Windows menu for now.
